“Kofto” is the Greek word for Italian “Tubetti”: small hollow tubes of pasta. Melissa Kofto are wonderful ingredients for all manner of soups. In Greece, Kofto are often used in “Youvetsi”: a traditional casserole made with ground lamb or beef, baked in a light tomato sauce seasoned with garlic and cinnamon and topped with cheese.
